Evolution Of Casabe And Its Health Benefits

By Lance Trombly

Casabe refers to flat bread, which is crispy and is made from cassava. The dish has been consumed for a long time in history and is still well known to people in the Dominican Republic. The significance it has over related dishes is the fact that it can not easily become stale or moldy.

The scale of food production was going down for some time until a couple of decades ago. The making of the products was boosted by the coming up of innovative producers. These enterprising merchants invented a labor intensive technology that utilized machinery to produce Casabe. As a result, the bread could now be produced in large scale.

At the moment, the consumption of Casabe among the Dominicans is quite high. The food is distributed in supermarkets and retail shops all over the country. Surplus production of the bread is also sold to overseas markets particularly in the United States where it is accepted.

The food is not different from the conventional bread. For example, it can be eaten at different times and in a number of ways. In most cases, the food is taken for breakfast during which time it is served with coffee. The product can also provide an effective company to soups. The bread can further be soaked in water then served with fried eggs or avocado.

Casabe can also be accompanied with a mug of chocolate to make a delicious, light supper. The food is prepared by first peeling the cassava. It is then washed and ground after which it is compressed, sieved and finally shaped into circular molds, and the baking is done on a hot plate.

The main importance of Casabe producing industry is that it has created employment for many people especially women in the rural environments. The idea of visiting urban areas and cities in search of jobs to earn a decent living is, therefore, greatly reduced and even eliminated in certain cases. The food has a benefit of being a self preservative and has a long life span of about eight months. The product can also be sold to consumers both locally and abroad.

The health advantages of Casabe are numerous. Significant of them is the fact that the food is fat free and rich in fiber. The main problem facing its production is that it is not very popular. Many people in many countries are not aware of the existence of the food. Besides, those who know it still consider it as one meant for the poor. Marketing of the bread should begin by stating how versatile it is and the associated health merits.
